Tidbit Tuesday~Key Lime Pie (a little lightened)

For some reason, I have had Key Lime Pie on the brain lately. I haven't had much else in my sleep deprived state, but I clearly have my priorities straight. I think because it is oh so good, summery, and cool. I clearly have baby weight to lose from Mini #3.

Let's face it from Mini #1 and Mini #2 too, but that is a story for another day.

I found this LIGHTENED recipe for Key Lime Pie and gave it a whirl. It didn't disappoint and I am strongly using the word LIGHTENED in the title to make myself feel a little better.

Ingredients

  • 1 (14-oz.) can fat-free sweetened condensed milk
  • 3/4 cup egg substitute
  • 1/2 cup fresh lime juice
  • 2 teaspoons grated lime rind (about 2 limes)
  • 1 (6-oz.) reduced-fat ready-made graham cracker crust
  • 1 (8-oz.) container fat-free whipped topping, thawed
  • Garnishes: lime wedges, lime curls

Preparation

  • 1. Process first 4 ingredients in a blender until smooth. Pour mixture into piecrust.
  • 2. Bake at 350° for 10 to 12 minutes or until golden. Let pie cool completely, and top with whipped topping. Garnish, if desired.

This Cannot Be Happening...

We have lots to get to about all that is happening under this umbrella of life, but I must address an issue that really has me crazy today. Yes, even crazier than the debt ceiling, this c-section I am still recovering from, my addiction to Starbucks, and so on.

A week from today...

7 days from now...

Next Monday...

starts kindergarten.

What's that you say?

Yes, K-I-N-D-E-R-G-A-R-T-E-N!!

Ahhh. I can't believe it.

Where has the time gone? Surely, I can't have a child old enough for BIG SCHOOL! I was an elementary school teacher and know that once those children enter those doors, they don't come out the same sweet, innocent boys and girls that entered. :)

I am excited for him, but also sad and a nervous wreck. I worry about all of the normal things moms worry about, but there is part of me that just truly can't believe he is going to school. I want to be 100% happy for  him, I really do. He has asked a lot of questions, is nervous about making new friends (since we moved and know no one and he had to leave his total BFF and sidekick behind, Abby who also doubled as another mother to him has thrown us both for a small loop), is curious about what all he will do all day, and truly cannot understand why they have rest time at school when he certainly doesn't rest during the day at home.

He is such a sweet, incredibly intelligent, curious, excited, and loving child.  I hope his teachers and friends accept him for him and love him an ounce as much as I do.
